But let's dive into the star of the show: the noodles. Xi’an Noodles offers an array of dishes that showcase their specialty—hand-pulled noodles. As customer Sarah D. raves, the noodles are "very fresh and delicious," while the broth strikes a balance, allowing the flavors to shine without overpowering the ingredients. The spicy lotus root is also a must-try, adding an extra crunch and zest to your meal.
Many patrons have noted the authenticity of the flavors, with Brian H. highlighting the "fluffy and thick" noodle texture, reminiscent of traditional biang biang noodles. The restaurant prides itself on delivering hearty portions and quick service, ensuring you won't wait long before indulging in your meal. The option to customize your dish on the self-service kiosk allows for a tailored dining experience, giving you the freedom to explore various toppings and spice levels.
While some dishes may have room for improvement—a sentiment shared by Albert T. regarding the Spicy & Tingly Beef Biang Noodle Soup—the overall quality, bustling atmosphere, and attentive service make Xi’an Noodles a delightful dining choice. Whether you're stopping in for a casual lunch, grabbing takeout, or enjoying a festive dinner with friends, this restaurant caters to all. They even accommodate dogs on the patio, allowing pet lovers to dine together!
As you step into Xi’an Noodles, you’re not just entering a restaurant; you're becoming part of a community that celebrates the art of noodle-making. With 5-star reviews and glowing recommendations, I can’t help but echo the sentiments of those who’ve discovered their favorite noodle spot here. “ This is my favorite place to get hand pulled noodles in Seattle. The noodles are very fresh and delicious. I really love the broth because it's not too overpowering which I really appreciate. Also check out their spicy lotus root. ”
“ Super easy parking, lots of spots on the street. Farmers market nearby on Saturday morning. Service was extremely fast, you place the order on a digital screen and are able to add whatever extras you want on there. The noodles were perfect; fluffy and thick and very authentic tasting. The broth was great also. There are 3 spicy levels which was helpful. Extra noodles only cost $3 which felt very worth it. ”
“ We visited Xi'an Noodles as a first foray into the hand made noodle scene around Seattle. This seemed like a good start, given that they have three locations, a sign that that the food served at the restaurant should be pretty good. We walked in on a brisk Saturday afternoon and this place was packed full of patrons slurping on noodles. Ordering is easy, done on a kiosk right in front of the entrance. Given how busy it was, we actually had to wait a couple of minutes for a table to open up after we placed our order. I'm not sure how they determine which table to bring food to - it seems like a guessing game for the server! The food does come out pretty fast and our first dish came out within 5 minutes. Hot Oil Biang Noodles ($13.99) - The noodles are very interesting, quite different from biang biang mian I've had in the past. Instead of slapping the noodles to lengthen, I feel like they cheat a bit by cutting the noodles instead. You can see this quite clearly because the noodles aren't straight; instead, there are corners that only exist if you cut the noodle in a zigzag pattern. This creates noodles that exhibit distinct textural contrast between the corners and the centers - the corners are far thicker. Overall still a good chew, just different. I found the hot oil sauce to be delicious - super savory with a nice pungent garlic flavor that sticks to the noodles very well. They also add bean sprouts to give an additional crunchy textural element. (4/5) Spicy & Tingly Beef Biang Noodle Soup ($14.99) - The biang biang noodles again are quite good and are immersed in a bone broth that I found to be a little undersalted. The chili oil seems to all rise to the top, making the base a bit wan and underflavored. The name says the dish will be "spicy and tingly" but I think they exaggerate a little too much. There is no hint of mala at all, and the "spicy" is barely there. Honestly I found this dish to be quite mediocre in flavor. The restaurant supplies sesame paste, chili crisp, and vinegar to adjust the food to preference. Even after adding a bit to the noodle soup, I still felt like was lacking. (3/5) Note: On the kiosk, when a dish is added, the "Optional add-ons" section says to select at least one but it's not actually required. I feel like this is very unclear and customers can get tricked into adding toppings that are already included in the menu item. I don't think the restaurant does this on purpose, but I think it's something that should be fixed. To be honest, I thought the food served here was good enough, but I feel like there's better places in Seattle. The fact that I enjoy the hand pulled noodle places in Detroit/Ann Arbor over here says something, given the Chinese population is way higher and denser here. At any rate, for anyone craving biang biang noodles, Xi'an Noodles isn't a bad choice. Bathrooms: Two unisex rooms ”
“ Xian Noodles is the best eat in the Udistrict Area. It is my go to restaurant and has made me obsessed with hand pulled noodles. The dry noodles are more flavorful than the soup option in my opinion. I usually get the lamb, but the beef is also very good as well. I honestly would not recommend getting the pork and would suggest you just eat somewhere else if you do not like spicy food. I like that if you dine in they have the sauces on the side, so you can add more to your meal. There is a self kiosk ordering station, but the workers are still attentive. However, if you do takeout make sure you eat it soon after or your noodles will get stuck together. ”
“ The noodles are amazing! It is not too spicy so anyone would enjoy it here. The noodles are handmade so they feel very fresh. Just tossed in sauce and a little meat/vegetables, they really are the star of the show. The food comes fairly quickly and the service staff were very nice and professional. There was a decent amount of seating so a great place to come if you want to sit in. It has a very modern feel. ”
“ The first time I tried Xi'an, it was a to-go order so I didn't feel like I could do a proper review. Now that I've tried it in the restaurant, I can honestly say that it was a great experience. Solid noodles. They weren't as clumpy as I remember it being. The soup was good. At first try, I thought it lacked some depth, but the more I tried, it became and better and better. The interior was also nicer- no more boxes and styrofoam everywhere. Ample comfortable seating. Also, I've noticed that the management has changed so I really hope they have a successful business opportunity. This time we also tried the black milk tea. Even though we ordered less sweet, it still was very sweet but the tea flavor was strong- which was fantastic to stand up to the noodle soup dish. Will be back ”
“ Great spot to stop and get some noodles and dumplings. I tried the mouthwatering chicken ($9.99) appetizer with a bun on the side ($3) and BF had the Tingling Beef Hand Pulled Noodles ($14.99). Everything was delicious. The chicken was bone-in so a bit hard to eat, but good flavor and portions. BF commented he wished there was more beef with his noodles but the flavors and noodles were great. The interior is clean, warm, and very cute! Efficient ordering system on to-go pad. ”
“ Stopped by after a day near UW and was recommended to come check this place out. I am a sucker for hand pulled noodles and so Xi'an Noodles was a perfect option. The service was friendly and quick after you input your order via a kiosk. The interior is clean and has a very modest mom and pop shop. The spicy cumin lamb noodles were delicious! The noodles were nice and chewy plus the lamb flavor was great. I also enjoyed the green bell peppers and onions which added some additional texture for the dish. For the price and flavor this is definitely worth a stop. I also got a mango smoothie which was really great and very refreshing too. If I lived nearby, this would be my definite go-to for hand pulled noodles; no frills and quick+great food! ”
“ Stopped here for lunch real quick with some friends! I really enjoyed my noodles here. I got the spicy cumin lamb noodles with soup and all of it was super yummy. The noodles were cooked perfectly and the broth was full of flavor. They have chili oil, garlic, and sesame paste on the tables so you can customize your noodles. They have tablets where you order which was convenient. Everything there is reasonably priced. Some of the best biang biang noodles I've had in Seattle so far. ”
“ Came here for dinner on a Friday night around 6:30 with some friends and it was a plesant experience. The food is not spicy at all so I added more chili on it, but it still wasn't spicy. They have freshly minced garlic, some sesame sauce, and vinegar also as condiments for you to add to your dish. I got the dry lamb noodle, but my friend got the noodle with soup and it looked pretty good! There are plenty of seats inside, but there's also parking patio outside that has about 4 tables that can sit up to 4 people and they'll bring out cutlery for those tables outside as well. ~~Parking: It's located on the less busy side of the street, so there's plenty of street parking available. ~~Service: Pretty good. You order by yourself on one of the 2 tablets they have at the front and place the reciept on the clipboard after choosing a seat. The servers will come by to give you water and your meals and that's it. Service is simple and fast. ~~Return: Yes ”
